GRAVES of BORDEAUX (GREAT BORDEAUX WHITE WINE)
LABEYRIE estate
Vintage : 2020
Grape variety : Semillon and Sauvignon
Alcohol : 12 % Vol.
In France, we are fortunate to have exceptional vineyards spread throughout the country run by equally exceptional men and women!
This is the case of Franck LABEYRIE, a Bordeaux winemaker who likes to age his wine in completely unusual places!
The day he will be able to go to the planet Mars to age his wine, it's sure Franck will leave in the first space shuttle with part of his production !
Ten years ago, he started to immerse his wine for several months in oyster racks in the Arcachon basin: it is the Wine of the huts, Graves red and white.
When we talk about snow wines, you will have understood it, we are talking about a wine aged in the mountains!
Franck transported nearly 2000 bottles of his Château LUGEY, Graves in white and red at an altitude of 2500 meters with the help of a helicopter.
This takes place in the winter sports resort of Cauterets in the Hautes-Pyrénées.
He then covered his crates with more than 6 metres of snow using a snow groomer in order to obtain the desired conditions: optimised storage away from light, humidity and constant temperature.
Tasting this Blanc des Neiges reveals a higher minerality than the original wine aged in the cellar.
For the aromas, the ideal is to compare the 3 bottles in red and white, namely the Graves Château de LUGEY aged in the cellar, the one aged under the sea: the Vin des Cabanes and this one aged under the snow: the Vin des Neiges.
Food and wine pairing
Original to accompany an even more original wine!
On a white pudding with porcini mushrooms, this Vin des Neiges will go wonderfully well!
